• Oversee daily stewarding operations to ensure the cleanliness and proper maintenance of kitchen areas, washing equipment, chinaware, glassware, flatware and other operating equipment.

• Maintain high standards of hygiene and food safety in accordance with hotel policies, Shangri-La Food Safety Management System (SFSMS) and relevant NEA standards.

• Supervise and lead the stewarding team, including staff scheduling, rostering, performance management, coaching and training.

• Manage inventory and cost control, including stock levels, breakage records, equipment purchases, labour costs and departmental expenses.

• Ensure timely support for F&B operations, including daily buffet and banquet setups, kitchen cleaning, silverware polishing and proper waste disposal.

• Monitor health, safety and sanitation standards through regular inspections and ensure compliance with pest control and safe working practices.

• Coordinate with suppliers and external contractors to maintain service quality, cleanliness and cost efficiency.

• Promote environmental sustainability through proper food waste segregation, recycling and responsible use of resources.

• Relevant experience in stewarding operations, preferably in a hotel or hospitality setting.

• Proven leadership skills and the ability to manage a team effectively.

• Knowledge of food safety, hygiene, sanitation and workplace safety practices.

• A proactive, responsible and team-oriented individual with a strong eye for detail.
