Mondo is a gelato bar, specialty café, and cocktail bar in one room. The FOH Barista runs the bar during service: coffee, gelato, and drinks.

The role is focused on service execution rather than recipe invention. SOPs, recipes, and specs are provided, with training and clear direction. You'll always know what's expected, why it matters, and how your shift fits into the wider service. What unites us is intentionality behind every drink and every scoop.

• Pull espresso and steam milk to spec
• Scoop and serve gelato with focus on understanding and describing the product and its intention
• Serve cocktails, mocktails, and non-alc drinks to spec
• Prep batched components for service - cold brew, chilled espresso, flavoured syrups, soft cream tops, and other daily prep per SOP
• Open, close, POS, payments, floor service

• Preferably 1+ year specialty coffee experience - can dial in, steam, taste
• Fast and clean behind a busy bar
• Available across the full week including weekends, on a rotating shift basis
• Right to work in Singapore
• Nice to have: cocktail or bar experience, latte art, comfort with structured prep and written SOPs
